What is a good profit margin for a food vendor or food truck?
Food vendors and food trucks often see gross margins between 60% and 75% on individual menu items since food cost typically runs 25% to 35% of the selling price. Net margin looks very different once you count permits, commissary kitchen fees, propane, and vehicle costs, many food vendors net between 6% and 15% overall.
How do I calculate profit margin for a food truck or food stall?
Start with food cost percentage: ingredient cost divided by the menu price. Subtract that from 100% to get your gross margin per item. Then factor in fixed costs, permits, commissary rental, fuel, and propane, to see your true net margin across a full event or trading day.
